Crispy Parmesan Carrot Fries with Chili Lime Sauce

Ingredients

  • 6-8 medium carrots
  • 4-5 tbsp olive oil
  • a couple pinches salt
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp onion powder
  • some red chili flakes
  • about 2 cups finely shredded parmesan cheese
  • 3 tbsp sour cream (or thick yogurt)
  • 2 tbsp mayo
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne
  • the juice of half a lime

Method

  1. Preheat the oven to 450°F and line a baking tray with parchment paper.
  2. Peel the carrots and slice them lengthwise into fry-shaped sticks about 1/4 to 1/3 inch thick.
  3. In a bowl, mix olive oil, salt, smoked paprika, oregano, onion powder, and chili flakes; toss the carrots in the mixture until evenly coated.
  4. Dip and roll the oiled carrot fries in shredded parmesan to coat the entire surface.
  5. Arrange the fries on the parchment-lined tray and bake for 18-20 minutes until crispy on top.
  6. Flip the fries, add more cheese if desired, and bake for another 2-3 minutes.
  7. While the fries bake, whisk together sour cream, mayo, smoked paprika, onion powder, cayenne, salt, and lime juice to make the dipping sauce; adjust seasoning to taste.
  8. Serve the carrot fries hot with the chili lime sauce.
