Peanut Butter Cottage Cheese Pancakes

Ingredients

  • 1 ¼ cup all purpose flour
  • 2 ½ tsp baking powder
  • ¼ tsp kosher salt
  • 3 large eggs
  • 1 cup cottage cheese
  • ¼ cup of milk of your choice
  • 3 tbsp peanut butter
  • 2 tsp vanilla extract
  • 1 tbsp maple syrup
  • ¼ tsp ground cinnamon
  • Topping: extra peanut butter and maple syrup

Method

  1. Combine eggs, cottage cheese, milk, vanilla, cinnamon, and peanut butter in a blender; blend until smooth.
  2. In a separate bowl, whisk together flour, salt, and baking powder.
  3. Pour the blended wet mixture into the dry ingredients and stir until just combined; a few lumps are fine.
  4. Heat a lightly buttered griddle or pan over medium-low heat.
  5. Scoop about 1/2 cup of batter onto the griddle and spread gently with a spoon, since the batter is thick.
  6. Cook about 3-4 minutes per side, flipping once bubbles appear at the edges, until golden and cooked through.
  7. Serve warm topped with extra peanut butter and maple syrup.
