Peanut Butter Cottage Cheese Pancakes

Ingredients
- 1 ¼ cup all purpose flour
- 2 ½ tsp baking powder
- ¼ tsp kosher salt
- 3 large eggs
- 1 cup cottage cheese
- ¼ cup of milk of your choice
- 3 tbsp peanut butter
- 2 tsp vanilla extract
- 1 tbsp maple syrup
- ¼ tsp ground cinnamon
- Topping: extra peanut butter and maple syrup
Method
- Combine eggs, cottage cheese, milk, vanilla, cinnamon, and peanut butter in a blender; blend until smooth.
- In a separate bowl, whisk together flour, salt, and baking powder.
- Pour the blended wet mixture into the dry ingredients and stir until just combined; a few lumps are fine.
- Heat a lightly buttered griddle or pan over medium-low heat.
- Scoop about 1/2 cup of batter onto the griddle and spread gently with a spoon, since the batter is thick.
- Cook about 3-4 minutes per side, flipping once bubbles appear at the edges, until golden and cooked through.
- Serve warm topped with extra peanut butter and maple syrup.
