Ropa Vieja

Ingredients
- 1.5 lbs flank steak
- Salt & pepper (for the steak)
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 4 garlic cloves, minced
- 1 (8 oz) can tomato sauce
- 1/2 cup vino seco
- 1 tsp salt
- 1 tsp cumin
- 1 tsp oregano
- 1 packet sazón
- 2 bay leaves
- 1 1/2 cups reserved broth from the steak
Method
- Cut the flank steak into smaller pieces and season with salt and pepper.
- Brown the steak on all sides in the pressure cooker.
- Add water to cover the meat, add the bay leaves, and pressure cook for 35 minutes.
- Remove the steak, let it cool slightly, then shred with two forks. Reserve 1 1/2 cups of the cooking liquid.
- In a pan with a bit of oil, sauté the onion, bell pepper, and garlic until softened.
- Stir in the tomato sauce, cooking wine, salt, cumin, oregano, and sazón seasoning.
- Add the shredded beef and reserved broth, then simmer for 20 minutes to let the flavors combine.
- Serve hot over white rice.
