Ingredients

  • 1.5 lbs flank steak
  • Salt & pepper (for the steak)
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 4 garlic cloves, minced
  • 1 (8 oz) can tomato sauce
  • 1/2 cup vino seco
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 packet sazón
  • 2 bay leaves
  • 1 1/2 cups reserved broth from the steak

Method

  1. Cut the flank steak into smaller pieces and season with salt and pepper.
  2. Brown the steak on all sides in the pressure cooker.
  3. Add water to cover the meat, add the bay leaves, and pressure cook for 35 minutes.
  4. Remove the steak, let it cool slightly, then shred with two forks. Reserve 1 1/2 cups of the cooking liquid.
  5. In a pan with a bit of oil, sauté the onion, bell pepper, and garlic until softened.
  6. Stir in the tomato sauce, cooking wine, salt, cumin, oregano, and sazón seasoning.
  7. Add the shredded beef and reserved broth, then simmer for 20 minutes to let the flavors combine.
  8. Serve hot over white rice.
