Veggie Stir-Fry with Turkey

Ingredients

  • 1 pound 85% lean ground turkey
  • 1 cup red bell peppers, diced
  • 1/2 medium onion, chopped
  • 1 3/4 cups low-sodium canned corn — or frozen, or cut from cob
  • 10 okra pods, sliced
  • 3 medium yellow squash, sliced

Method

  1. Wash hands with soap and water.
  2. In a large frying pan over medium heat, cook ground turkey until no longer pink.
  3. Add red peppers, onions, corn, okra, and squash and cook for 5 minutes until tender.
