Veggie Pizza Pita Pockets

Ingredients

  • 1 pita, whole wheat — cut around the sides, into flats
  • 2 tablespoons low-sodium tomato sauce
  • 1 slice part-skim mozzarella cheese
  • Pick two from the following vegetables:
  • green and red bell peppers, sliced
  • mushrooms, chopped
  • 1/16 cup broccoli, chopped — 1 tablespoon
  • 1 tablespoon red onion, chopped
  • spinach, shredded

Method

  1. Wash hands with soap and water.
  2. Place one pita round on a plate.
  3. Spread 2 tablespoons of tomato sauce on pizza.
  4. Sprinkle various chopped vegetable over sauce.
  5. Layer one slice of cheese on top of sauce.
  6. Cover with the other half of pita round.
  7. Microwave 35 to 45 seconds, or until cheese melts.
  8. Slice in half, let cool, and enjoy!
