Vegetable Fried Rice

Vegetable Fried Rice

Ingredients

  • 2 cups cooked white rice
  • 1/2 cup celery — chopped
  • 1/4 cup onion — chopped
  • 2 tablespoons vegetable oil — or cooking oil of choice
  • 1 package (10 ounces) frozen mixed vegetables
  • 1 tablespoon low-sodium soy sauce
  • 1 dash black pepper

Method

  1. Wash hands with soap and water.
  2. Make 2 cups of cooked white rice.
  3. Use the package directions to make the rice.
  4. Chop 1/2 cup of celery and 1/4 cup of onion.
  5. Heat the oil in a skillet or large frying pan.
  6. Add the celery and onion.
  7. Stir fry for 2 minutes.
  8. Add the vegetables to the pan.
  9. Keep stirring the vegetables until they are tender-crisp.
  10. Add the cooked rice.
  11. Sprinkle with soy sauce and pepper.
  12. Stir fry for 2 minutes until the rice is heated and the flavors are blended.
