Tuna Quesadillas

Tuna Quesadillas

This quesadilla can be cooked quickly in the microwave or on the stove. Serve with a fresh salad and an apple for a complete meal. USDA MyPlate Kitchen — Utah State University Cooperative Extension (public domain), via myplate.food

Ingredients

  • 1 can tuna fish, packed in water — 5 ounces, drained
  • 1 tablespoon light mayonnaise
  • 4 flour tortillas — 8 inch
  • 1/2 cup reduced-fat cheddar cheese — shredded

Method

  1. Microwave Spoon filing onto half of each tortilla.
  2. Top filling with cheese and fold tortilla in half.
  3. Microwave on high for 60 seconds.
  4. Turn the plate halfway through cooking time.
  5. OR Stovetop Divide mixture onto two tortillas.
  6. Top with cheese and the remaining two tortillas.
  7. Spray a skillet with non-stick cooking spray.
  8. Brown quesadillas on both sides.
  9. Cut before serving.
