Tomato N' Cheese Pasta

Ingredients

  • 1 cup whole grain pasta — shell, penne, or ziti
  • 1/4 cup onion — chopped
  • 2 garlic cloves — minced
  • 1 tablespoon olive oil — or cooking oil of your choice
  • 1 can diced tomatoes — 14.5 ounces, un-salted
  • 1/2 teaspoon basil — fresh or dried
  • 1/2 teaspoon oregano
  • 1/4 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 cup part-skim mozzarella — shredded
  • 1 tablespoon Parmesan cheese — grated

Method

  1. Wash hands with soap and water.
  2. Cook pasta according to package directions; drain.
  3. In a small saucepan, cook onion and garlic in oil until tender.
  4. Stir in tomatoes, basil, oregano, sugar, and pepper.
  5. Bring to a boil.
  6. Reduce heat.
  7. Simmer uncovered for 15 minutes.
  8. Add pasta to sauce.
  9. Transfer to a greased 1-quart baking dish.
  10. Top with cheeses.
  11. Bake, uncovered at 375 °F for 10 to 15 minutes or until cheese is melted.
