Three-Grain Peanut Bread

Ingredients

  • 1 cup flour
  • 1/2 cup oatmeal — quick cooking
  • 1/2 cup cornmeal
  • 1/2 cup non-fat dry milk powder
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 2/3 cup peanut butter
  • 1 egg
  • 1 1/2 cups non-fat milk

Method

  1. Wash hands with soap and water.
  2. Preheat oven to 325 °F.
  3. Combine dry ingredients in a large bowl.
  4. Using two knives, cut peanut butter into dry ingredients until it appears coarse and crumbly.
  5. In a small bowl, beat together egg white and milk.
  6. Add to dry ingredients and mix well.
  7. Spread mixture into a greased loaf pan.
  8. Bake at 325 °F for 1 hour and 10 minutes.
  9. Cool for 10 minutes and remove from pan.
