Sweet Potato Pone

Sweet Potato Pone

Ingredients

  • 3 cups grated sweet potatoes
  • 1 cup molasses (or dark cane syrup)
  • 2 teaspoons ground ginger
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/3 cup vegetable oil

Method

  1. Wash hands with soap and water.
  2. Preheat oven to 325 degrees F.
  3. Combine all ingredients in a 3-quart saucepan.
  4. Simmer slowly, stirring constantly, for 10 minutes.
  5. Pour into well-greased 9-inch baking pan.
  6. Bake for 30 minutes, stirring every five minutes for the first 20 minutes.
  7. Smooth down the top and allow to brown.
  8. Cut into squares and serve hot or cold.
