Sweet and Sour Vegetables

Ingredients

  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 teaspoon low-sodium soy sauce
  • 1/4 teaspoon fresh ginger
  • 1 cup canned pineapple chunks
  • 1 tablespoon cornstarch — for thickness
  • 2 teaspoons vegetable oil — or cooking oil of choice
  • 1 package (16 ounces) frozen stir-fry vegetables

Method

  1. Wash hands with soap and water.
  2. Combine all ingredients except vegetables into bowl; mix and set aside.
  3. Heat 2 teaspoons of oil in large skillet and add frozen vegetables.
  4. Cook for 3 to 4 minutes or until vegetables are crisp-tender.
  5. Add sweet and sour sauce and cook for another 2 minutes or until mixture comes to a boil.
  6. Add water if it seems too thick.
  7. Serve immediately.
