Sugar and Spice Cookies (from Better Baking Mix)

Ingredients

  • 1 Better Baking Mix
  • 1/2 cup brown sugar, packed — or white sugar
  • 1 teaspoon cinnamon
  • raisins — 1/3 cup, optional
  • 1/4 cup vegetable oil — or cooking oil of choice
  • 1 egg
  • 1/2 teaspoon vanilla

Method

  1. Wash hands with soap and water.
  2. Preheat oven to 350 degrees F.
  3. Lightly grease baking sheet.
  4. In a mixing bowl, combine baking mix, sugar, cinnamon, and raisins (optional).
  5. Stir to mix.
  6. Put oil, egg, and vanilla in a small bowl.
  7. Beat with a fork to mix.
  8. Add oil and egg mix to the dry ingredients.
  9. Stir to combine.
  10. Dough will be thick.
  11. Measure level tablespoons of dough.
  12. Drop on cookie sheet about 2 inches apart.
  13. Dough will spread 2 1/2 to 3-inch wide cookies as it bakes.
  14. Bake 10 to 12 minutes or until edges start to turn brown.
  15. Be careful not to overbake.
  16. Remove cookies from baking sheet while still warm.
