Split Pea Soup

Simmering this soup for hours keeps your kitchen warm on a cold winter day. Add ham for an even heartier soup. Enjoy this soup with a fresh salad and warm whole grain bread. Ingredients

  • 1 large onion, chopped
  • 3 tablespoons margarine or butter
  • 1 1/2 cups dry split peas
  • 6 cups water
  • 1 teaspoon salt

Method

  1. Wash hands with soap and water.
  2. Cook chopped onions in margarine in a large pan until tender over medium heat.
  3. Wash and drain split peas.
  4. Add water, split peas, and salt to onion.
  5. Bring to boiling.
  6. Lower heat and cover pan.
  7. Simmer about 2 hours, until thickened.
