Spinach and Meat Cakes

Ingredients

  • 1 pound 93% lean ground beef — or lean turkey
  • 2 cups frozen spinach, chopped — may substitute with 2 bunches of fresh spinach
  • 1/2 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • black pepper — to taste
  • 3 cups cooked brown rice

Method

  1. Wash hands with soap and water.
  2. Preheat large frying pan (no oil).
  3. Combine all ingredients except brown rice in a large mixing bowl.
  4. Mix well.
  5. Form mixture into 12 small balls.
  6. Place in frying pan and flatten into patties using a spatula.
  7. Cook over medium heat until cooked on both sides.
  8. Serve over brown rice.
