Somali Summer Salad

Ingredients

  • 3 tablespoons olive oil — or oil of your choice
  • 1 tablespoon lemon juice
  • 3 medium apples
  • 2 green peppers
  • 3 medium tomatoes
  • 2 cucumbers
  • salt and pepper — optional

Method

  1. Wash hands with soap and water.
  2. In a large bowl, combine oil and lemon juice.
  3. Dice all the fruits and vegetables and then add to the bowl.
  4. Add salt and pepper to taste (optional).
  5. Serve chilled.
  6. Best served within 24 hours.
