Sloppy Garden Joes

Ingredients

  • 1 medium yellow onion, chopped
  • 1 medium carrot, chopped or shredded
  • 1 medium green pepper, chopped
  • 1 pound 85% lean ground turkey — or chicken
  • 1 can (8 ounces) low-sodium tomato sauce
  • 1 can (14.5 ounces) whole tomatoes, crushed
  • 4 cans (2 ounces each) mushrooms, drained
  • 1/4 cup barbecue sauce
  • 6 whole wheat buns, split in half to make 12

Method

  1. Wash hands with soap and water.
  2. Sauté onions, carrots, green pepper, and ground turkey or chicken in a large pan over medium heat for 5 minutes.
  3. Add tomato sauce, crushed tomatoes, mushrooms, barbecue sauce, and bring to boil.
  4. Reduce heat and simmer for 10 minutes, stirring occasionally.
  5. Uncover and cook for an additional 3 minutes or until thick.
  6. Serve open-faced on toasted or plain whole-wheat buns.
  7. Refrigerate leftovers within 2 hours.
