Skillet Noodles and Beef

Ingredients

  • 1/2 pound lean ground beef
  • 1/2 cup onion, chopped
  • 1 can (15 ounces) low-sodium tomato sauce
  • 1 1/2 cups water
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon basil
  • 3 cups noodles, uncooked, 1/2-inch wide
  • 1 package (10 ounces) frozen chopped spinach
  • 1 cup fat-free cottage cheese
  • 1/2 cup part-skim mozzarella cheese, shredded

Method

  1. Wash hands with soap and water.
  2. Brown ground beef in a large skillet.
  3. Drain and rinse to remove fat.
  4. Add onion, tomato sauce, water, and spices.
  5. Cover and bring to a boil.
  6. Add noodles.
  7. Cover and simmer for 5 minutes.
  8. Defrost spinach in the microwave.
  9. Stir spinach into skillet mixture.
  10. Cover and simmer for 5 minutes.
  11. Stir mixture.
  12. Spoon cottage cheese on top and sprinkle with shredded mozzarella.
  13. Cover and simmer for 10 minutes.
  14. Add water if mixture gets too dry.
