Shepherd's Pie

Ingredients

  • 2 large potatoes, diced
  • 1/3 cup fat-free milk
  • 1/2 pound 85% lean ground turkey
  • 2 tablespoons flour
  • 1 package (10 ounces) frozen mixed vegetables
  • 1 can (14.5 ounces) low-sodium vegetable broth
  • shredded cheese — optional

Method

  1. Wash hands with soap and water.
  2. Place diced potatoes in saucepan.
  3. Cover with water and bring to a boil.
  4. Reduce heat and simmer (about 15 minutes).
  5. Drain potatoes and mash.
  6. Stir in milk and set aside.
  7. Preheat oven to 375 degrees F.
  8. Brown turkey in a large skillet.
  9. Stir in flour and cook for 1 minute, stirring constantly.
  10. Add vegetables and broth.
  11. Bring to a slow boil.
  12. Spoon vegetable-meat mixture into an 8-inch square baking dish.
  13. Spread potatoes over mixture.
  14. Bake 25 minutes.
  15. Serve hot.
  16. Garnish with shredded cheese (optional).
